Zucchini Tomato Bites

Ingredients:

2 large zucchinis

1 large ripe tomato, thinly sliced

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup shredded mozzarella cheese (or any preferred cheese)

Directions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Slice the zucchini into 1/4-inch thick pieces. Brush with olive oil on both sides and place them on the baking sheet.

Sprinkle the zucchini slices with salt, pepper, garlic powder, and Italian seasoning on both sides.

Top each zucchini slice with a thin tomato slice.

Sprinkle shredded mozzarella cheese over the tomato slices.

Bake for 12-15 minutes until the cheese is melted and lightly browned.

Let it cool for a couple of minutes before serving.

Garnish with fresh herbs if desired.
