part 2 of healthier holiday recipes: chai cake!!

recently i’ve come to really like chai flavor in baked goods, so i decided to make this chai cake with cream cheese frosting. it is simple, but so delicious. give it a try and let me know what you think!

recipe:

makes 9 squares

3/4 cup greek yogurt (170g)

2 egg whites

1/2 cup almond milk (80mL)

1 chai tea bag

1 & 1/4 oat flour (125g)

1/2 cup coconut sugar (96g)

1 tsp baking powder

3/4 tsp cinnamon

1/4 tsp ginger

1/4 tsp cardamom

1/4 tsp baking soda

1/4 tsp salt

1/4 cup greek yogurt

1/4 cup cream cheese

2 tbsp maple syrup

heat almond milk in the microwave for 45 seconds. put in the chai tea bag and steep for 10 minutes. in the meantime, whisk together the oat flour, coconut sugar, baking powder, cinnamon, ginger, cardamom, baking soda, and salt. in a separate bowl, whisk together the chai milk, greek yogurt, and egg whites. Pour the wet ingredients into the dry ingredients and mix until combined. pour batter into a lined 8x8 inch square tray. bake at 350F for 25-30 minutes. remove from pan and allow to cool completely. mix together greek yogurt, cream cheese, and maple syrup to make the frosting. frost the cool cake, cut into squares, and enjoy!
