This one I highly recommend! @Laura jade has provided the Gluten free community with an amazing recipe that is not on Gluten and Lactose free, but also delicious! I recommend looking at her page for inspo when you’re in a rut!
Recipe below:
- GF flour (about 2 1/2 spoons)
- 2 eggs
- 1 Banana
- 1 tsp Vanilla Extract
- 2 tsp lactose free milk
Method :
- Mash up the banana, and mix it together with the 2 eggs, milk splash, and vanilla essence
- Add 2-3 large spoonfuls of GF flour. (For healthier pancakes, the flour isn't necessary) The flour helps the pancakes stay together, so the more you add the thicker the mixture and pancakes!
- Mix all the ingredients together. Use a blender if you want a smoother mixture!
- Oil (or use fry light spray) in your pan and heat it on a temperature of around 4/5. Too hot and the pancakes will stick to the pan and burn quickly.
- Once the pan is heated, pour in the mixture and cook each pancake for a few seconds each side!
Serve with banana, fruit, or syrup depending on desired
