Wow! Not to brag, but this tasted pretty professional. π©βπ³ For ~ $15 - 20, I was able to make 2 yummy poke bowls for dinner. Check out how to make all the elements below! Bonus* this is also a low-fodmap dish that tastes sooo yum!*
Servings: ~ 2.5
π Sushi Rice
INGREDIENTS:
- 2/3 cup short-grain Japanese rice
- 1 1/3 cup water
- 1/4 cup rice vinegar
- 2 tbsp. sugar
π©βπ³ HOW TO:
1. Rinse rice ~2min in fine mesh strainer
2. Add rice and water to instant pot, rice setting (low pressure) for 12 minutes
3. Let natural release for 10 minutes
4. Mix vinegar and sugar in small bowl and microwave for 1 minute, then stir into the rice (wooden spoon works best!)
5. Add rice as your base of the poke bowl
π£ Poke Bowl (really can add whatever you like!)
INGREDIENTS:
- Lox slices (my deli had a container of Lox for $10!)
- Cucumber shreds
- Shredded carrots
- Edamame
- Seaweed strips (cut down into smaller pieces)
- Sesame seeds
- Cilantro
- Eel sauce
π₯΅ Wasabi Mayo Sauce
- 1/2 tbs Wasabi paste
- 2 tbs Mayo
- 2 tsp lime juice

1. Assemble all of the ingredients into your bowl. No specific order or placement, itβs all going in the same place π
2. Drizzle on the Wasabi dressing, if youβd like. I also added eel sauce for the touch of sweetness
