EASY PEASY LEMON SQUEEZY ✨🍋

This easy and lemony cake is very suitable for lemon lovers. Usually we always see lemon glaze on top but this time i’ve changed to “Lemon Cream Cheese Glaze” so you guys will get more thick and creamy lemon flavour in every bites. Trust me once you guys start eating this cake you’ll crave for more !

Prep time : 15 minutes

Cooking time : 35- 45 minutes

Serves : 5-6 person

Baking Pan size : Loaf pan 10”

Recipe :

🍰 BOWL A (i)

Unsalted Butter - 230 g

Castor Sugar - 240g

Eggs - 4 (L)

Vanilla essence - 1 tbsp

🍰 BOWL A (ii)

All purpose flour - 150g

Baking Soda - 1/4 tsp

Baking Powder - 1/4 tsp

🍰 BOWL B

Greek yogurt / any natural yogurt - 1/2 cup

Lemon Zest - 1 lemon

Lemon Juice - 1-2 tbsp

🍰 BOWL C (Lemon Cream Cheese Glaze)

Cream cheese - 100g

Butter - 30g

Lemon juice - 1 tbsp

Icing sugar - 1 cup

Full Cream Milk - 1 tbsp

BAKING STEPS:

1. Prepare all the ingredients (Bowl A,B,C)

IN BOWL A (i) & (ii)

1. Mix Butter for 1-2 minutes @ medium speed (stand mixer medium - high speed 1-2 mins)

2. Once the butter is light and creamy add on castor sugar and mix until ligt and fluffy for 2 minutes.

3. Stop mixing butter and sugar once the butter texture and colour has changed to pale white.

4. Add on eggs one by one (do not overmix) as the batter will be runner.

5. Add on vanilla essence.

6. Add Bowl A(ii) stage by stage. At this stage you can either use a mixer (low speed) or mix manually with spatula untill well combined.

IN BOWL B

1. Cut 1 Lemon and press for the juice.

2. Scrap the lemon skin for lemon zest (avoid the white skin cause it’s bitter).

3. Add on yogurt,lemon juice and lemon zest & mix until well combined.

POUR BOWL B INTO BOWL B

(mix with spatula until well combined)

IN BOWL C

1. Mix cream cheese & butter until well combined (make sure they are in room temprature)

2. Add on icing sugar (stage by stage)

3. Add on milk and lemon juice

BAKING TIME

1. Grease some oil onto the baking pan and put parchment paper

2. Spread the cake batter into the pan and spread them evenly so they rise nicely once baked.

3. Bake into the oven for 35-40 minutes (190 200 C) (you can check with any toothpick/cake tester to check if the cake is cooked or not)

4. Let the cake cool down for 15 - 20 minutes

DECORATION TIME

1. Pour the lemon glaze onto the cake

2. Add some fresh lemon / dried lemons onto the cake

3. Ready to eat with some fresh lemon juice !

Notes

📝 Do not overmix each steps as it will make the batter runner .

📝 For smaller size cake you may cut the recipe into half.

📝 Greek yogurt enhance more lemony flavour.
