if you're into making sourdough bread you know that they say to throw away your discard but in this household- i refuse! the time, ingredients, money, etc all to waste? absolutely not. 🙅🏼♀️ so here is a great recipe for GOOD cookies to use with that discard!!
what you'll need:
+ 14 tablespoons (1 stick + 3/4 stick) unsalted butter, slightly softened
+ ½ cup sugar
† ½ cup brown sugar
+ 1 large egg, room temperature
+ 1 cup sourdough starter, unfed
+ 1 tablespoon vanilla extract
+ 2 cups all-purpose flour
+ 1 teaspoon salt
+ 1 teaspoon baking soda
+ 2 cups large chocolate chips
how to:
+ preheat your oven to 350°F
+ in a large bowl, combine the softened butter and sugars. (make sure the butter is soft enough to mix with the sugar by hand)
+ add 1 egg to the mixture & stir
+ stir in the sourdough starter and vanilla extract
+ add the flour, salt, and baking soda, but don't overmix
+ mix in the chocolate chips and let the dough refrigerate for 15 minutes, refrigerate up to overnight or just make right away if you want to!
+ drop spoonfuls of dough onto a parchment-lined baking sheet (or use ice cream scoop)
+ bake 8-10 minutes for a cake-like cookie or bake 6-8
minutes for a chewier cookie
the cookies MAY look a little gooey in the center and that is ok. they will continue to bake and be cooked throughout after being out of the oven for a few minutes!
