INGREDIENTS
Tofu
1 block firm tofu - cubed and pressed
Miso Sauce
2 tablespoon miso paste
1 clove garlic - minced
1 teaspoon grated ginger
2 tablespoon soy sauce or aminos
2 tablespoon rice wine vinegar
1 tablespoon water
juice from ½ lemon or lime
2 tablespoon cornstarch or arrowroot starch
1 tablespoon maple syrup
black pepper to taste
Other optional ingredients
Cooked grain of choice
1-2 tablespoons fresh chopped scallions or cilantro
INSTRUCTIONS
Preheat oven to 425 degrees.
Mix together your miso sauce ingredients.
Toss your cubed tofu in the miso sauce and let it marinate for 10 minutes.
Put tofu on a lined sheet pan, reserving the excess sauce. Roast for 30-35 minutes.
Toss cooked tofu in miso sauce. Serve with your favorite sides. I went with rice and roasted carrots.
