Summertime Chickpea Salad:

Vinaigrette:

3 tbsp EVOO, 3 tbsp Lemon juice, 1 tbsp chopped lemon zest, 1/2 tsp salt/garlic powder and 1/4 tsp pepper.

Salad:

2 cups cherry tomatoes

5 mini cucumbers

2 - 15 oz cans of chickpeas

1/4 red onion

2 avocado

1/8 cup cilantro or basil

Bell pepper

1 jar of Kalamata olives
