Easy Dinner Idea

It’s sometimes hard to cook, when you struggle with your mental health. Having easy meals that you can prepare makes it easier.

Last night I had red roasted potatoes. I baked them in the oven for 40 minutes on 400F. I don’t have an air fryer, but I’m sure it’s faster to prepare in those.

I paired my potatoes with Morning Star’s Buffalo chicken Pattie’s. Which are meatless! So good on toasted bread.
