My family have been making pineapple tarts at home ever since we discovered this recipe a few years ago! These delicious pineapple tarts taste more like the Peranakan kind. The tart crust is crispy and instantly melts in your mouth.

TART CRUST RECIPE:

(I based it on this Malaysian Auntie’s recipe but made some changes.)

- 360g white spelt flour

- 1 egg yolk

- 50g icing sugar

- 250g French butter

You should definitely use French butter for a richer and tastier tart crust! Combine the egg yolk, icing sugar, and room temperature French butter in a bowl. Whisk until it turns pale in colour. It’s best to whisk it for as long as possible. Sift in 1/3 of the spelt flour and gently whisk to combine. Repeat for another 2 times. Transfer the dough into a cling wrap and let it rest in the fridge for 15-20 minutes before using.

PINEAPPLE PASTE RECIPE:

I used reduced sugar ready made pineapple paste. Combine it with some clove powder and a splash of red wine. The amount depends on your level of spice tolerance.

Store the completely cooled pineapple tarts in airtight jars. You do not have to refrigerate them. Just make sure that the container is super airtight.
