✨🇲🇽Chicken Birria Tacos🇲🇽✨
Ingredients:
- 2 Large chicken breasts
- Corn tortillas
- 1 tbsp ground oregano
- 1 tbsp ground black pepper
- 1 tbsp garlic powder
- 1 tbsp of any all purpose seasoning
- 1 whole onion, quartered
- 1 red onion, diced
- 1/2 bunch of cilantro, finely diced
- limes, quartered
- 1/2 head garlic
- 2 roma tomatoes
- 4 ancho chillies, de-stemmed and seeded
- 4 guajillo chillies, de-stemmed and seeded
- ✨optional: chile de arbol✨ (as many as you like)
- 2 bay leaves
- water, as needed
- 1 large stick of cinnamon
- salt, as needed
- 2 tbsp of high-heat oil
Steps:
1- Season chicken breasts generously with all seasonings: salt, black pepper, oregano, and garlic powder. Add about 2 tbsp of a high heat neutral oil ( or enough to cover the bottom of the pot) and sear chicken breasts until a nice crust is formed.
2-After crust is achieved, add more oil if needed, and sear onion, tomatoes, garlic (peeled and smashed), and chilies.
3- After slight char is achieved, add chicken breast back to pot and add enough water, the pan should be about 3/4ths full. Add cinnamon and bay leaves. Let boil on medium-high for about 30-45 minutes.
4- Remove everything but chicken and place in a blender. Blend until smooth. Add blend back into the pot. ✨optional: strain back into pot✨ Let boil for 2 hours.
5- Remove chicken breast from consomé and shred. At this point it should be falling apart. Add back into consome and adjust seasonings/add water as needed. Lower heat to medium low, and simmer for about 20-30 minutes.
6- Heat nonstick pan (i did not add any oil) on medium heat. Take corn tortillas and dip into consomé and place on a nonstick pan. Immediately add cheese and birria chicken. Add diced onion/cilantro. Add more cheese and close. Flip once bottom layer of cheese is melted, and toast until the other side of the tortilla is toasted/cheese is melted. Remove from pan and serve onto plate. Repeat until desired serving is achieved.
7- Once desired serving is achieved (i usually go for 3 tacos per person), serve a portion of the consomé in a side dish for dipping. Add diced onion and cilantro on top tacos and into consomé.
8- ENJOY 💗
I served this with a mixed drink that contained 2 shots tequila/1 oz strawberry daiquiri mix, topped with club soda.
