Who doesn't love a good fall soup to kickoff the fall season!!

I LOVE eating veggie based foods, so I definitely add more veggies to the blend, but here's the super easy recipe:
π 1 pint of campari tomatoes
π About 4 Roma tomatoes, quartered
π 1 red pepper and 1 green pepper, quartered
π 2 garlic bulbs
π half of a red onion, sliced
π half of a Zucchini, quartered
π fresh basil, as much as your heart desires!
π garlic powder, Italian seasoning, salt and pepper!

Place all veggies in a large baking sheet, and set aside garlic bulbs. Oil everything with avocado oil or olive oil. Season generously with garlic powder, Italian seasoning, pepper, and lightly dust with salt. Add garlic bulbs in the middle, drizzle with oil, and dust with salt. Bake for about 30 minutes (depending on your oven) until veggies are slightly wilted.
When your veggies and garlic are finished in the oven, squeeze your garlic into the blender, then add your veggies. Blend away!
Transfer to a pot, add the rest of your Basil, simmer for a few minutes, and serve!
