Homemade Roasted Tomato Soup

Simple ingredients, so delicious 🙌🏼

What you’ll need:

- 2 1/4 lbs cherry tomatoes

- 1/4 cup olive oil

- 4-5 cloves garlic

- 1/4 cup basil leaves (or 1tbsp dried basil)

- 3/4 tsp salt (or salt to taste)

- pepper to taste

- 1/4 cup heavy cream

- 1 cup vegetable broth or chicken broth (heated)

Instructions:

1. Preheat oven to 425°

2. Then add tomatoes, garlic, and oil to baking dish. Toss to coat tomatoes

3. Bake for 25-35 minutes. Let cool.

4. Add tomatoes from pan to blender. Add broth, basil, salt, pepper, heavy cream.

5. Blend
