HIGH PROTEIN SPAGHETTI CARBONARA FOR TWO 💛 🍝✨🧀
i had the most amazing carbonara a couple months ago & literally couldn’t stop thinking about how i could make this at home but bump up the protein! this recipe for two is to die for!! 690 cals & 45g protein per serving
(yes, it’s higher in calories than a typical macro friendly high protein meal. compared to *regular carbonara* this is a lower calorie and higher protein option so don’t come for me in comments lol)
ingredients👇🏼
💛 8oz chickpea spaghetti (i used banza)
💛 2oz cubed pancetta (i get it precut from trader joes)
💛 1oz shaved parmesan / pecorino romano mix
💛 1 tbsp olive oil
💛 2 egg yolks
💛 1 whole egg
💛 3 tbsp salt
💛 1/2 tbsp pepper
directions👇🏼
❤️ boil 6 cups of water in a wide pot with 3 tbsp salt
❤️ while water is boiling, whisk 2 egg yolks & 1 whole egg
❤️ add in shaved cheese and pepper and whisk until combined, then set aside
❤️ add spaghetti to the boiling water and cook for 6-7 mins
❤️ while spaghetti is cooking, put 1 tbsp olive oil & pancetta in a small pan and fry until crispy which should take 2-3 mins
❤️ spoon out pancetta to remove it from the fat
❤️ before pasta is done cooking, set aside 2 cups of pasta water
❤️ drain pasta
❤️ add 1 cup of pasta water back into your pot with the drained pasta noodles on low heat
❤️ cook for another minute, then add in egg/cheese mixture
❤️ with tongs, toss the noodles in the sauce until well coated. to loosen or thicken the sauce as needed, add in additional pasta water. i ended up adding in ~1/2 cup
❤️ add in pancetta
❤️ serve and enjoy! 🍝✨🧀
