HIGH PROTEIN SPAGHETTI CARBONARA FOR TWO ๐Ÿ’› ๐Ÿโœจ๐Ÿง€

i had the most amazing carbonara a couple months ago & literally couldnโ€™t stop thinking about how i could make this at home but bump up the protein! this recipe for two is to die for!! 690 cals & 45g protein per serving

(yes, itโ€™s higher in calories than a typical macro friendly high protein meal. compared to *regular carbonara* this is a lower calorie and higher protein option so donโ€™t come for me in comments lol)

ingredients๐Ÿ‘‡๐Ÿผ

๐Ÿ’› 8oz chickpea spaghetti (i used banza)

๐Ÿ’› 2oz cubed pancetta (i get it precut from trader joes)

๐Ÿ’› 1oz shaved parmesan / pecorino romano mix

๐Ÿ’› 1 tbsp olive oil

๐Ÿ’› 2 egg yolks

๐Ÿ’› 1 whole egg

๐Ÿ’› 3 tbsp salt

๐Ÿ’› 1/2 tbsp pepper

โค๏ธ boil 6 cups of water in a wide pot with 3 tbsp salt

โค๏ธ while water is boiling, whisk 2 egg yolks & 1 whole egg

โค๏ธ add in shaved cheese and pepper and whisk until combined, then set aside

โค๏ธ add spaghetti to the boiling water and cook for 6-7 mins

โค๏ธ while spaghetti is cooking, put 1 tbsp olive oil & pancetta in a small pan and fry until crispy which should take 2-3 mins

โค๏ธ spoon out pancetta to remove it from the fat

โค๏ธ before pasta is done cooking, set aside 2 cups of pasta water

โค๏ธ drain pasta

โค๏ธ add 1 cup of pasta water back into your pot with the drained pasta noodles on low heat

โค๏ธ cook for another minute, then add in egg/cheese mixture

โค๏ธ with tongs, toss the noodles in the sauce until well coated. to loosen or thicken the sauce as needed, add in additional pasta water. i ended up adding in ~1/2 cup

โค๏ธ add in pancetta
