I do my best to eat veggies on a daily and I try to find ways that are easier and more enjoyable for me to eat them. For some reason I prefer to eat shredded carrots than to eat them whole or in thicker pieces lol…

This carrot salad is perfect to eat as a snack or as a side dish! It has simple ingredients and it is quick (which we love over here)!

The amount of carrots you use depends on how many servings you want to make.

I say 3 carrots are about 2-3 servings.

Ingredients:

3 Carrots

1 Tbsp of Pepper

1 Tbsp of Salt

1/4 of lemon juice

(measurements can always be adjusted to preference)

1. Thoroughly wash your carrots, then make sure to peel and trash the first layer of skin.

2. Peel the rest of the carrots and place in a bowl.

3. Add 1 Tbsp of salt, 1 Tbsp of pepper, 1/4 of lemon juice

4. Mix everything and refrigerate

Like I said this is super simple, very yummy, and has health benefits!
