Ingredients
• 1 lb lobster meat (5-6 lobster tails depending on size)
• 1 tbsp melted butter
• 1/4 cup mayonnaise
• 1 tbsp lemon juice (about half a lemon)
• 2 stalks celery
• 1 whole pickle
• 1/2 tsp kosher salt
• 1/4 tsp cayenne pepper
• 2 sprigs fresh dill
• 4 whole brioche rolls
• 1 bag potato chips
• 1 tsp Old Bay seasoning
Instructions
1. Preheat your smoker: Set it to 325°F. Butterfly your lobster tails and place them in the smoker with a little butter on top of the meat. Cook until the internal temperature reaches about 135°F, then place immediately on ice to cool down. Optional used precooked lobster meat.
2. Prepare the sauce: While the lobster is cooling, chop your celery, pickles, and dill. Place them in a bowl with mayonnaise, lemon juice, salt, and ground cayenne pepper. Optionally, sprinkle in some Old Bay seasoning. Mix together and set aside.
3. Prepare the lobster meat: Once cool, remove the lobster meat from the shells and chop it into bite-sized pieces. Stir into your mayonnaise mixture.
4. Toast the buns: Lightly butter brioche buns and toast them on a pan.
5. Assemble the rolls: Load up each bun with the lobster mixture.
6. Prepare the chips: Toss potato chips in a bowl with Old Bay seasoning. Serve alongside the lobster rolls and enjoy!
