Wet

* 1 1/2 cups white granulated sugar

* 1/2 cup unsalted butter, melted

* 1/2 cup vegetable oil

* 1 1/3 cups buttermilk, room temp.

* 2 large eggs + 1 large egg yolk, room temp.

* 1 tbsp vanilla extract

* 1 tsp vinegar

* 2 tsp red food coloring

Dry

* 2 1/4 cups all purpose flour

* 3 tbsp cocoa powder

* 1 1/2 tsp baking powder

* 1 tsp salt

Cream Cheese Frosting

* 2 blocks (16oz) cream cheese, softened to room temp.

* 1 stick unsalted butter, softened to room temp.

* 2 tsp vanilla extract

* 4 cups powdered sugar, sifted

Bake Temperature: 350F

Bake Time: 30-35 minutes until knife or toothpick comes out clean

Pan: 2-9x9 round cake pans

1. Preheat oven to 350F.

2. Mix flour, cocoa powder, baking powder, and salt together and set aside.

3. Add your oil, butter, and sugar to a bowl and cream together for about 1-2 minutes.

4. Add your vinegar. Mix in.

5. Add your eggs and your egg yolk. As well as your vanilla extract. Mix.

6. Add your buttermilk and red food coloring. Whisk in.

7. Sift your dry ingredients into your wet ingredients. If you don’t have a sifter this step can be skipped.

8. Spray your cake pans generously with baking spray.

9. Evenly pour cake batter into each cake pan.

10. Bang on counter to release air in batter.

11. Bake at 350F for 30-35 minutes until a knife or toothpick comes out clean.

12. Let cool in pan for 10 minutes. After ten minutes. Take out of pan and let completely cool on a wired rack.

13. Once your cake is cooled, to a bowl or stand mixer, add your softened cream cheese, softened butter. Cream for about 2-3 minutes.

14. Add your vanilla extract and mix in.

15. Start sifting in your powdered sugar. Mix as you go. I did 1 cup at a time.

16. Once your cream cheese frosting has formed, spread frosting onto your cake layers. Place your first layer face up, add some frosting and spread on top. Then add your last cake layer by flipping it upside down. Add frosting to the entire cake, spreading on the top and sides to seal cracks.

17. Cut and enjoy this delicious red velvet cake that will literally melt in your mouth! ❤️
