Coconut rice
Coconut Rice Recipe
Ingredients:
rice
coconut milk
water
salt or seasoning of your choice
Butter | oil
Diced onions
shredded coconut (optional, for garnish)
Instructions:
Rinse the Rice: Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.
Combine Ingredients: In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, seasoning and butter. Stir to combine.
Cook the Rice: Bring the mixture to a boil over medium-high heat. Once it starts boiling, add onions and reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed.
Rest the Rice: Remove the saucepan from the heat and let it sit, covered, for an additional 10 minutes. This allows the rice to steam and become fluffy.
Fluff and Serve: Fluff the rice with a fork. If desired, sprinkle the shredded coconut on top as a garnish.
Serve: Serve the coconut rice warm as a side dish to your favorite main course, such as curry, grilled chicken, or seafood, pepper stew or sauce.
