September screams Fall to me and although it’s not quite Fall just yet, let’s make an easy and delicious, homemade, Sweet Potato Cornbread! Sweet Potatoes definitely put you in a Fall mood.

Sweet Potato Cornbread Recipe:
1-C AP Flour
1-C Cornmeal
2-L eggs
1/3 C ea. granulated and brown sugars
1-TBSP baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1-C mashed sweet potato
3/4 C Buttermilk
1/2 C Sour Cream
1-capful vanilla extract
1-TBSP melted butter
Opt. Orange food coloring
Easy Honey Butter:
2-TBSP melted butter
2-TBSP honey
Combine your dry ingredients, whisk together set aside. Combine your wet ingredients, blend together. You will have a few lumps. Make well in middle of dry ingredients, pour in wet ingredients, blend until creamy/smooth. Add vanilla and melted butter last. Batter will be cornbread thick. Bake in oven on 375 for 25 mins. Each oven varies.
Using a toothpick, poke holes in the cornbread and add homemade honey butter on top. Let the honey butter soak in 5-10 mins. Slice, serve and enjoy!
