Every time I go to a small Malay stall, I always get their lemongrass fried chicken. It's so delicious! The more lemongrass, the more flavorful and aromatic the fried chicken will be. Additionally, the longer the chicken is marinated, the tastier and more tender it will become. It's a perfect dish to serve with rice.
📖 Ingredient A (Marinade, blend together)
Lemongrass (5-6 stalks), shallots, garlic, ginger
📖 Ingredient B (Marinade)
1 teaspoon salt
1 teaspoon sugar
a little water
white pepper
2 tablespoons turmeric powder
1 teaspoon curry powder
3 tablespoons tapioca starch/cornstarch
3 dried chili peppers cut into pieces
lots of curry leaves for more flavor
🫳🏻 Mix all the ingredients together until it becomes a thick paste, then marinate the chicken overnight for the best flavor.
