Nasi lemak is a traditional Malaysian dish that consists of fragrant coconut rice, served with a variety of flavorful accompaniments.
🥣Coconut milk rice
Ingredients: white rice, coconut milk, water, pandan leaves, salt, ginger
Instructions:
1. Rinse the rice and combine all ingredients in a rice cooker
2. Once the rice is fully cooked, keep warm, remove pandan leaves and ginger, fluff rice and serve with toppings.
🥣Anchovy Sambal
Ingredients:
Shallots, garlic, anchovies, onion slice,salt ,sugar,chili paste,tamarind paste with water
1. Heat up oil in pan. Fry anchovies in medium heat till golden brown & crispy
2. Using the remaining oil (from frying anchovies),fry the finely chopped shallots, garlic and onion slice.Sauté until fragrant
3. Seasoning with salt and sugar,stir well
4. Add in chilli paste ,slowly stir and cook on low heat untill oil separated from sambal
5. Then add in tamarind paste and water and let it simmer
6. Lastly add the fried anchovies and cook until the sauce has thickened
7. Ready to dish out✅
