one of #MyGoTo breakfast fixes has always been a plate of well panfried, crispy Chai Tow Kway aka as carrot cake!! It is such a simple dish but yet at the same time, so hard to balance the outer crisp of the eggs whilst keeping the radish cake moist and chewy. 😋

Over the years, I have tried many different stalls but I always end up coming back to the same old stall that I first tasted 14 years ago. It is usually not my default go-to given that queues here are really long and if I am really craving for it, I will have to plan for it the day prior just so that I can get there before 9am, where the queues will still be less than 1 hour long. Post 9am, the crowd starts coming in and the longest I've waited so far has been 1.5h hours. 🫣

1. Fried till golden brown 🍳🥚

To me, the absolute basic for a good plate of chai tow kway will be the need for it to be fried till it comes with crispy crunch.

Biting in, it gives a good balance of the initial crunch, followed by the soft interior where the radish cakes lie. Whilst some stalls' chai tow kway will turn soggy once you decide to get it for takeaway, I've done this a few times here and it always still tastes nice even after I get home!! (explains the # of takeaway boxes) 🥡

2. Chilli paste with a punch 🌶

As someone who doesn't have the biggest chilli tolerance, chilli paste is rarely a driver for my dining preference but the chilli paste here goes really well with the chai tow kway. That said, don't go crazy on it if you're not the biggest chilli eater as it does tend to be on the spicier side 🥵

3. Secret ingredient - chai poh 👩🏻‍🍳

Adding an interesting twist to the dish, this stall adds in pan fried chai poh (preserved radish) which introduces a new dimension to the dish.

Served on the side, you can determine how much of it you want to mix in for each bite depending on your preference on saltiness. For me, I like to have a good mix between having the chai tow kway alone and mixing in the chai poh every few mouths ABSOLUTE YUMS!!!

If all of the above sounds interesting to you, do give the shop a try but do take note that queues can get crazy. They have a buzzer system so don't be fooled if you don't see a queue - regulars typically order and go somewhere else before returning after an hour. 🤣 As a trick, I look at the number of plates/packaging that they have laid out as a guide on how many more packs are ahead of me!
