Celiac / gluten free friendly meal prep idea
I’m a girl in her 20s with celiac so eating gluten free is hard on the budget sometimes!
Majority of my ingredients/ food is from Aldi’s except for the sour cream & taco seasoning.
For this meal prep you will need :
- ground beef 1lb
- sweet potato’s (I used 2 small ones)
- taco seasoning of your choice (mines gluten free)
- olive oil & seasonings of your choice for the sweet potato’s
- chips & sour cream is optional!
Cooking:
- I first diced up my sweet potato’s & peppers and put them to the side
- brown your beef in a pan (I usually stay between 4-6 heat)
- drain the grease once beef has been browned (but not for super long)
- add in a half cup or cup of water to beef depending on how much taco seasoning you use, I only used about half.
- after adding seasoning in and stirring I add my diced peppers and lower the temperature then put a lid on and stir ever so often.
- before I cook the beef I preheat my oven to 380 and spread out my diced sweet potato’s on a pan, once the ovens ready I coat the sweet potato in olive oil, salt, pepper, and smoked paprika then put them in the oven for around 25-30 mins or until they are fully cooked through. You can check by smooshing it with a fork!
- once the beef and peppers are cooked through I toss it in a strainer to get the extra grease / liquid out same with the sweet potato’s.
With this meal prep I only prepped for 2 days ahead so everything that I cooked is halved evenly.
I added a small container of sour cream for the beef and peppers along with some corn chips.
I always pack some fruit to go with my meal preps the container I use is for 2 cups, I mostly do strawberries a handful of blueberries and like 6 grapes so that I’m not eating an insane amount of sugar. (Grapes are pretty high in sugar BUT I didn’t want them to go to waste lol)
I also pack some kind of high protein low sugar granola bar to snack on if I get hungry since this will be for my 8 hour shifts at work.
