curry chicken is almost like my go-to comfort food to prep for rainy weathers, gatherings, or even when I have some extra time on my hand ~
after lots of research on various curry chicken recipes online, I can say ( + my mum) that I have recreated THE CREAMIEST & TENDEREST curry chicken my grandma used to make it for me ^^ this all-in-one-pot recipe is made convenient for preparation and cooking + perfect for both spicy & non-spicy lovers ⬇️⬇️
Prep Time: 15 mins
Cooking Time: 40 mins
Servings: 4 Pax
Marinade: soya sauce (2 tbsp), turmeric powder (2 tbsp), salt (1/2 tbsp)
Spice Paste: prima taste sauce kit - curry chicken (use curry paste only), turmeric powder (1 tbsp), cumin powder (1 tbsp), baba’s packet meat curry powder (2 tbsp), salt (1 tbsp)
Ingredients: 4 russet potatoes, 8 drumsticks, coconut cream (500 ml), curry leaves (handful), lemongrass (3 white stalk parts), chilli powder (adjust according to spice preference), water (1 L)
Step 1: Marinate meats using the marinade recipe above^ for at least > 2 hours in the fridge. Cut potatoes into your preferred sizing and soak in water to prevent yellowing :)
Step 2: Heat pot and add cooking oil/ olive oil. Add Spice Paste recipe above^ + curry leaves and fry under high heat until the spice paste turns redder and is emitting oil.
Step 3: Add your marinated meats and fry it for 3 mins under high heat. Once done, add 1 L of water.
Step 4: Add potatoes and lemon grass and simmer it under small heat for 30 - 40 mins, depending on how soft you want your potatoes to be. Strain out excess oil in the process.
Step 5: Once done, add salt (2 tbsp) + sugar (1/2 tbsp) Pour in coconut cream and give it a little stir. Simmer it under low heat for 5 mins.
Step 6: Taste to adjust your spice level by adding chilli powder or sugar. For me, I like it to be a little spicy ~ THAT’S ALL🫶🏻
Although the process looks a bit complicated, it is still super easy to make as a-lot of prep can be done beforehand! Go try it and you def won’t regret making this🥘🥘
