Hearty Lentil Soup Recipe

Ingredients:

• 1 Maggi cube (chicken flavor)

• Ginger powder (to taste)

• Ginger seasoning (to taste)

• Thyme (to taste)

• Turmeric powder (to taste)

• 2 tbsp tomato paste

• Handful of kale

• 1 scotch bonnet (optional, adjust for spice level)

• Pack of celery, chopped

• 1 green bell pepper, chopped

• Black pepper (to taste)

• All-purpose seasoning (to taste)

• 1 pack of lentils

• 6 cups water

• Chicken bones (leftover from rotisserie chicken)

• Himalayan salt (to taste)

• 1 tbsp butter

• 1 bay leaf

Step-by-Step:

1. Make Homemade Chicken Broth:

• In a pot, add leftover chicken bones from your rotisserie chicken and 4 cups of water.

• Bring to a boil and add 1 Maggi cube, turmeric powder, ginger powder, all-purpose seasoning, Himalayan salt, and butter.

• Let it simmer for 30 minutes to make a flavorful broth. Adjust seasoning to taste.

2. Sauté the Vegetables:

• In a larger pot, heat a bit of oil and sauté the chopped celery, scotch bonnet, onion, and green bell pepper until soft.

• Add thyme, black pepper, ginger seasoning, and all-purpose seasoning to taste. Stir for a couple of minutes to combine flavors.

3. Combine and Cook:

• Add tomato paste to the sautéed vegetables and cook for a couple of minutes.

• Pour in your homemade chicken broth from the other pot and bring the soup to a boil.

• Add the bay leaf, butter, add 2 more cups of water

• Add the lentils and let the soup simmer for 30-40 minutes until the lentils are tender.

4. Finish It Off:

• Add the butter, kale to the soup. Let it cook for another 10 minutes.

• Adjust seasonings if needed.

Serve and enjoy! A warm, hearty, and nourishing lentil soup perfect for any cold day! Great for batch cooking!
