We make this easy asparagus side dish almost every week! It’s made with pantry ingredients we already have on hand and results in perfectly tender asparagus tossed in a light sauce.
Note: Thin stalks of asparagus work best for this recipe since they cook so quickly.
INGREDIENTS
- 1/2 lb asparagus
- 1 tbsp olive oil
- 1 tbsp butter
- 1/2 cup chicken or vegetable broth
- salt to taste
INSTRUCTIONS
1. Rinse the asparagus. Trim and discard the tough ends of the asparagus. Cut each stalk in half.
2. Add oil to a skillet over high heat. When the oil is hot, add the asparagus and cook 3-5 minutes.
3. Add the broth (be careful there will be steam). Then add the butter and salt. Cook over medium-high heat for 5-7 minutes until the liquid thickens.
To level up your asparagus, consider adding additional herbs such as oregano or a splash of fresh lemon juice at the end!
