INGREDIENTS

🥚 6 large eggs

🥚 3 tbsp mayo

🥚 1/2 tbsp Dijon

🥚 1 tsp lemon juice

🥚 1 tsp hot sauce

🥚 1/2 tbsp chopped fresh dill

🥚 salt to taste

🥚 fried onions and green onions to garnish

INSTRUCTIONS

1. Hard boil the eggs. Allow to cool and then peel.

2. Preheat smoker to 190F and add wood chips according to manufacturer instructions.

3. Place the eggs directly on the grates and increase temperature to 240F. Cook for 15-20 minutes or until the eggs take on a golden bronze color. Transfer to a plate and allow to cool.

4. Cut each egg in half and transfer the yolks to a bowl. Combine with the mayo, Dijon, lemon juice, hot sauce, dill and salt. Mash and mix until smooth.

5. Fill each egg with a spoonful of the filling and garnish with fried onions and green onions.
