scrappy baked french toast!

This recipe is a great way to use up the ends of bread or little scraps! You can also just use sliced sandwich bread if that’s what you have.

add one layer of bread scraps to the bottom of a baking pan, this recipe used a six cup Pyrex dish.

whisk six eggs, 1/3c milk, 1/2tsp vanilla, cinnamon, nutmeg, and a pinch of salt. pour half of it over the first layer, add fruit now if you want it.

add a second layer of bread and pour the remaining mixture over top. use a fork to press down on the bread, making sure the egg is being absorbed. add the remaining fruit on top and a few small pats of butter.

bake at 375 for 35 min or until golden brown and baked through, test with a knife.

enjoy with powdered sugar over top or maple syrup (my personal choice)
