Ingredients:

For the Hamburger Gravy:

* 1 pound @ayersvalleyfarm ground beef

* 1 small onion, finely chopped

* 2 cloves garlic, minced

* 2 tablespoons whole wheat flour

* 1 1/2 cups low-sodium beef broth

* 1/2 cup low-fat milk

* 1 teaspoon Worcestershire sauce

* Salt and black pepper to taste

* 1 cup frozen peas

* 1 tablespoon olive oil

For the Cauliflower Mashed Potatoes:

* 1 medium-sized cauliflower head, cut into florets

* 2 cloves garlic, minced

* 2 tablespoons butter

* 1/4 cup grated Parmesan cheese (optional)

* Salt and black pepper to taste

* Chopped fresh parsley for garnish (optional)

Instructions:

Healthy Hamburger Gravy:

Brown lean ground beef in a skillet. Remove excess fat. Add chopped onion and garlic, sauté until translucent. Sprinkle whole wheat flour over the meat, stir for 1-2 minutes.

Gradually add low-sodium beef broth, low-fat milk, and Worcestershire sauce. Simmer until thickened. Add frozen peas, simmer for 2-3 minutes.

Cauliflower Mashed Potatoes:

Steam cauliflower florets until tender, then drain. Mix with minced garlic, butter, and grated Parmesan cheese (optional). Mash or blend until desired consistency, season with salt and pepper.

Serve: Spoon healthy hamburger gravy over cauliflower mashed potatoes. Garnish with parsley if desired. Enjoy!
