These roasted carrots are a great side dish for any meal, and they're packed with nutrients and flavor. Ingredients:
- 8-12 Carrots
- 1 tbsp Honey
- 1/2 cup Goat cheese
- 1/4 Plain Greek yogurt
- Salt
- Pepper
- 1/8 cup Pine nuts
- Fresh parsley for garnish
- sprinkle Oregano buds
- sprinkle Garlic powder
- sprinkle Onion powder
Instructions:
Preheat your oven to 400 degrees F.
In a bowl, mix together some honey, goat cheese, and Greek yogurt.
Spread the carrots on a baking sheet season salt, pepper, oregano buds, garlic powder, and onion powder, avocado oil and pine nuts on top.
Bake for 20-30 minutes, or until the carrots are tender and slightly caramelized.
