Chicken Rotel Pasta

Ingredients:

Chicken(boneless 2-3lbs)

1 Rotini one large box)

Fresh spinach (one bag)- I use 1/2 cup

1 can of rotel

1 Bell pepper

1 Onion

1 red bell pepper

Extra virgin olive oil

Heavy cream (optional)

• Directions:

Preheat over to 350 F.

Put chicken in dish well coated with extra virgin olive oil, season to preference (garlic powder, Italian, creole) Mix well! Bake in oven till done & shred or chop into chunks

Chop onion, bell pepper & place in skillet with a small amount of extra virgin olive oil to brown.

Chop & add spinach to skillet

Cut half block of velveeta cubed, add to skillet

Add heavy cream to thicken if you'd like.

Now, add your cooked chicken & 1 can of rotel to mixture. Mix well. Add noodles.

Dump into casserole dish, about 1/2 cup of shredded cheese on top.

Place in oven to melt & heat thoroughly
