EASY WEEKNIGHT DINNER

I don’t know about you but I’m a sucker for a good loaded backed potato. This is such a quick & easy dinner that is full of customization options :)

INGREDIENTS: (what I used)

• 1 large potato

• salt, pepper, & butter for taste

• shredded cheese of your choice (I used Colby jack, but I think feta crumbles would be delicious as well!)

• avocado

• cooked bacon crumbles, or packaged bacon bits

• fresh green onion/scallions

• balsamic glaze
