Hello and welcome back to my healthy meal prep series! Today I will be sharing my meal prep recipe I made over the weekend - Chicken Pasta Salad! ๐Ÿ”๐Ÿ—๐Ÿฅ—

The first month of 2024 has come to a close, and Iโ€™m glad that I have been diligently sticking to my meal prep habits so far. One contributing factor would be relying on easy recipes that do not require too much prep effort - including this very recipe!

When I think about what constitutes an easy recipe, I think of one that does not require too much cooking! Salads are especially fuss free because they usually contain fresh ingredients like vegetables that do not need to be cooked - saving time and effort. I also usually plan my steps ahead so that I can minimise the pots/pans being used so that there will be less washing! ๐Ÿ˜‚

๐Ÿณ Ingredients:

- Chicken breast / Garlic powder / Dried thyme / Salt & pepper

- Veggie fusilli / Romaine lettuce / Cherry tomatoes / Egg

- Kewpie sesame dressing

๐Ÿณ Steps:

1. Make the pasta - Bring a pot of water to a boil and cook the pasta according to package directions.

2. Prep the chicken breast - I personally like to butterfly it so that the piece wonโ€™t be too thick. Season the chicken breast (which should be at room temp) with garlic powder, dried thyme, S&P. Leave aside and prepare the other ingredients.

3. Make your jammy eggs - Using the same pot that was used for the pasta, top up the water and bring it to a boil, lower your eggs in and leave it for 6.5-7 min.

4. Prep your veggies - Wash the romaine and cherry tomatoes, and cut them accordingly. If you have a salad spinner it would be good to spin dry the romaine so it remains crisp and not turn soggy.

5. Cook your chicken - Bring a pan to medium high heat and add oil. Pan fry your chicken breast for 2 minutes on the first side, and 3 more minutes on the other side or till both sides are golden brown. Once ready let it rest and assemble the rest of the salad.

6. Assembly time - Pour the kewpie sesame dressing into a separate sauce container. Place the romaine, cherry tomatoes, pasta and the egg into your meal prep container. Top with the pan fried chicken breast (you can choose to slice it as well so itโ€™s easier to eat) and enjoy!
