Black eyed peas, Honey cornbread, rice and a side of salad

Here are some measurements I used

1 cup black eyed peas (double in size when soaked) enough to feed 4 ppl

1/2 onion

1 tbs minced garlic

3 slices of turkey bacon (if not this one pictured, make sure it's a thick cut)

1 tsp Tony's for sautéed mix

1tsp garlic powder for sautéed mix

1tsp onion powder for sautéed mix

4 cups broth

2 cups water

this broth pictured is already seasoned so you won't need much seasoned salt. Season to your taste, I let the ancestors guide my hands 😅 these are only estimated measurements! GOOD LUCK!

Ok guys! I'm no chef but I picked up a few things in my 30 🤫 years of life and mama taught me a few things 😅 Here is a simple Sunday dinner

step 1: Soak black eyed peas overnight in cool water and a little salt, place in the refrigerator. This will cut down your cooking time tremendously!

step 2: Rinse peas and take out any skin that came off the peas and anything else that doesn't look like it belongs 😅

step 3: Set peas aside and start chopping your onions and meat. I used Turkey bacon for this recipe because it's quick. But you (like My mom and grandmother) can use smoked turkey parts (neck or legs) this requires you to boil meat (THAT'S another recipe!) DO NOT CHOP THE ONIONS AND MEAT ON THE SAME BOARD OR WITH THE SAME KNIFE! 😩

step 4: Make your broth if you have to mix it. You will need the broth ready to go!

step 5: Heat olive oil in pot and sauté onions until clear and then add in minced garlic sauté until fragrant

step 6: add in your meat and brown

step 7: season your veggie and meat with seasoned salt or Tony's Cajun seasoning (this is what I prefer) garlic powder and onion powder. Stir

step 8: add in broth until peas are covered about an inch over and let simmer until boiling for about 10 minutes on medium heat.

step 9: add in 2-3 cups of water, Italian seasoning and bay leaf, stir. Turn down to medium low and let cook for 30 minutes

after 30 minutes check the peas, stir and add more broth or water if needed, taste liquid so you can season to taste. DO NOT STIR TOO MUCH IT WILL TURN TO MUSH! Cook for another 20 minutes (until peas are soft not mushy!) and Dinner is done!

I usually make rice, cornbread and some type of veggie with this. For this meal, I made a salad.
