Butternut squash is on trend for all things fall, but most people are afraid to use it because of how intimidating it looks! The larger hard squash may have a tough exterior but it really isn’t hard to roast.

There is definitely more than one way to roast a butternut squash but this is the way I do it and think is best!

Here is what you need to do:

1. Cut off the ends of the squash.

2. Cut it in half lengthwise.

3. Scoop out the seeds, you can use a melon baller, ice cream scoop or just a spoon.

4. Brush with oil or butter.

5. Lay cut side down on a piece of parchment on a baking sheet.

6. Bake at 400 F for 45-50 minutes or until it is soft to the touch.

Allow it to cool and use in all your favorite recipes! You can even add fun flavors like thyme, rosemary, brown sugar, nuts, maple syrup or spices like cinnamon and nutmeg when you roast.
