Vegan Mexican Fast Casual

I found my new favorite vegan breakfast burrito at Paradise Taco. I didn't get a clear photo but it has tofu scramble, potatoes, cheese, salsa and a delicious ranch sauce. They’re a fast casual Mexican restaurant that took over the old Heartbreakers location earlier this year.

They offer fun menu items like double layer, tacos with cheese between the soft and hard tortillas and vegan crunch wraps. Taco filling options include jackfruit, impossible beef, mushrooms, chorizo and banana blossom. And they even do a Mexican pizza that I didn't get to try yet.

But other than a phenomenal breakfast burrito I also recommend you taking the nachos and dipping them into the Elote. Trust me on this one. It was delicious.

The prices are pretty affordable for a vegan spot as they're trying to emulate the accessibility of a Taco Bell. I appreciate that.
