Ingredients:

4 large boneless breasts

Salt/pepper to taste

1 tsp Cajun seasoning

2 tbsp flour

2 tbsp olive oil

2 tbsp fresh minced garlic

1 cup chicken stock

1/2 cup heavy cream

1 tsp Worcestershire sauce

1/2 cup grated Parmesan cheese

4 oz cream cheese (room temperature)

1 tsp garlic powder

1/2 cup sun dried tomatoes OR 1 cup fresh baby tomatoes (chopped)

1 tsp Italian seasoning

1/2 tsp red pepper flakes

1/2 tsp basil

1/4 cup red or white table wine

1 cup shredded mozzarella cheese (for topping)

Box of Penne or other type of rigid pasta

Directions:

Add olive oil to Instant Pot. Select Sauté

Add chicken and sauté until lightly browned on both sides

Remove chicken from IP and onto a plate

Sauté garlic until lightly browned

Add in chicken stock, salt/pepper, garlic powder, basil, tomatoes, pepper flakes, Italian seasoning, Worcestershire sauce, and Cajun seasoning

Stir

Add wine. Stir and continue sautéing for a minute

Turn off sauté

Return chicken to Instant Pot

Close and set to SEAL

Cook on high pressure for 8 minutes

Natural release for 10-11 minutes

During this time, prepare pasta, drain, and place in large serving dish or casserole dish

After IP natural release, remove chicken, cut breasts in half, and place on top of pasta

Put dish in oven or microwave just to retain warmth (do not heat oven)

Select sauté on IP

Add cream

Add flour and whisk until lumps are gone

Bring to a low simmer

Add parmesan cheese and stir until melted

Add cream cheese

Simmer to preferred thickness, stirring, and adding more flour if needed. Stir or whisk to get any lumps out

Turn off sauté

Pour the sauce over the chicken and pasta

Sprinkle with mozzarella cheese and sliced tomatoes if preferred

Serve and enjoy!
