400g Tofu

1 Green pepper

1 Red pepper

1 Red onion

½ tsp Oregano

½ tsp Cumin

½ tsp Ginger

1 tsp Paprika

2 tbs Tomato purée

Handful spring onion

1 tsp Corn flower

½ Garlic and parsley

1 tsp Curry powder

½ Black pepper

1 tsp Salt

1/2 cup chicken broth

2 tbs Olive oil

Tofu preparation

Soak off all excess water by padding the Tofu with a paper towel, leave the Tofu in the refrigerator (overnight), pad it 3 times with a paper towel before cooking. Cut it in medium cubes, separate it and put it in a large bowl, add tsp corn flower, paprika, black pepper, ½ salt, mix all the ingredients well

In a large pan, pour some oil, let it warm up, then add Tofu, keep on turning it so it doesn’t stick on the pan, fry until it’s golden brown in all sides, take out the Tofu

In a separate pan, add the peppers, onion, oregano, cumin, ginger, paprika, garlic and parsley, curry powder, ½ tsp salt, fry for 8 minutes, add tomatoe purée, mix for 2 minutes, add sugar (optional) if it’s a bit sour to add some sweetness taste, mix well and add chicken broth, mix for 1 minute, add Tofu in the mixture and gently continue stirring to avoid breaking of Tofu, cook for 2 minutes, add spring onions, lower the heat, cover the pan, let it simmer for 2 minutes, turn the stove off. Serve it warm or cold 💝
