This has been my go to macaroni salad for parties for years and it’s always a huge hit! This macaroni salad has veggies and is creamy, sweet, and tangy — plus the Greek yogurt and eggs add some nice protein! Add even more protein by using high protein pasta !
Ingredients
⚡️8oz elbow pasta
⚡️1/2 small red onion, finely diced
⚡️2-3 small stalks of celery, diced
⚡️1/2 red bell pepper, diced
⚡️6-8 sweet gherkins, diced
⚡️4 eggs hard boiled, diced
⚡️2/3 cups of plain Greek yogurt
⚡️1/2 cup of mayonnaise
⚡️1 tbsp honey
⚡️1 1/2 tbsp apple cider vinegar
⚡️1 tbsp sweet pickle juice (from the gherkins)
⚡️1 1/2 tsp Dijon mustard
⚡️3/4 tsp salt
⚡️1/4 tsp black pepper
Directions
1. Boil your pasta according to the directions on the box.
2. Dice your celery, onion, gherkins, eggs and red bell pepper.
3. In a small bowl, whisk together your greek yogurt, mayonnaise, honey, vinegar, pickle juice, Dijon mustard, salt, and black pepper.
4. In a large bowl, add all your ingredients and drizzle in the sauce. Toss to combine. Cover and chill for at least 30 minutes. Enjoy cold!
