How to make Salt and Pepper Crawfish?
Ingredients:
• 1 lb (450g) fresh crawfish
• 1/2 cup cornstarch
• 1 teaspoon salt
• 1 teaspoon black pepper
• 1 teaspoon white pepper
• 1/2 teaspoon Sichuan peppercorns (optional)
• 4 cloves garlic, minced
• 2-3 red chili peppers, sliced
• 2 green onions, chopped
• 1 teaspoon sugar
• Vegetable oil for frying
• Lemon wedges for garnish
Instructions:
1. Prepare the Crawfish:
• Clean the crawfish thoroughly under running water. Remove the guts and the vein by pinching the tail and pulling it out. Pat dry with paper towels.
2. Coat and Fry:
• Toss the crawfish in cornstarch, ensuring they are evenly coated.
• Heat a deep pan with enough vegetable oil for frying. Once hot, add the crawfish in batches, frying until the shells turn bright red and crispy (about 3-4 minutes). Remove and drain on paper towels.
3. Seasoning:
• In a small bowl, mix the salt, black pepper, white pepper, Sichuan peppercorns, and sugar.
• In a separate pan, heat 2 tablespoons of oil. Add the minced garlic and stir-fry until fragrant. Add the red chili peppers and cook for another minute.
4. Combine and Serve:
• Add the fried crawfish to the pan and toss them in the garlic and chili mixture.
• Sprinkle the seasoning mix over the crawfish and toss well to coat.
• Garnish with chopped green onions and serve with lemon wedges.
