How to make Three Earthly Delicacies?
Ingredients:
• 2 medium potatoes
• 1 large eggplant
• 1 green bell pepper
• 3 cloves garlic, minced
• 2 tablespoons soy sauce
• 1 tablespoon sugar
• 1 tablespoon vinegar
• 1 tablespoon cornstarch mixed with 2 tablespoons water (for slurry)
• Salt to taste
• Cooking oil for frying
Instructions:
1. Prepare the Vegetables:
• Peel the potatoes and cut them into bite-sized wedges.
• Cut the eggplant into similar-sized pieces.
• Slice the green pepper into strips.
2. Fry the Vegetables:
• Heat a generous amount of oil in a pan over medium-high heat. Fry the potatoes until golden and crispy. Remove and drain on paper towels.
• In the same pan, fry the eggplants until tender and slightly golden. Remove and drain.
• Fry the green peppers briefly until they are just cooked but still crisp. Remove and set aside.
3. Make the Sauce:
• In a small bowl, mix the soy sauce, sugar, vinegar, and cornstarch slurry.
4. Combine and Stir-Fry:
• In a clean pan, heat a little oil and sauté the minced garlic until fragrant.
• Add all the fried vegetables back into the pan and stir well.
• Pour the sauce over the vegetables and stir until the sauce thickens and coats everything evenly.
5. Serve:
• Transfer to a serving plate and garnish with chopped green onions if desired. Serve hot with steamed rice.
