How to make Daifuku?
Ingredients:
• 1 cup glutinous rice flour (mochiko)
• 1/4 cup sugar
• 2/3 cup water
• Potato starch or cornstarch (for dusting)
• 1 cup sweet red bean paste (anko)
Instructions:
1. Prepare the Red Bean Paste:
• Divide the sweet red bean paste into 8 equal portions and roll each portion into a ball. Set aside.
2. Make the Mochi Dough:
• In a microwave-safe bowl, combine the glutinous rice flour and sugar.
• Gradually add water to the mixture, stirring until smooth.
• Cover the bowl loosely with plastic wrap or a microwave-safe lid.
3. Microwave the Dough:
• Microwave the mixture on high for 1 minute. Stir the dough with a wet spatula.
• Microwave for another 1 minute. Stir again.
• Microwave for an additional 30 seconds to 1 minute, until the dough becomes translucent.
4. Shape the Daifuku:
• Dust a clean surface and your hands with potato starch or cornstarch to prevent sticking.
• Turn the mochi dough onto the dusted surface and let it cool slightly.
• Divide the dough into 8 equal pieces.
5. Fill the Daifuku:
• Flatten each piece of dough into a round disc.
• Place a ball of red bean paste in the center of the disc.
• Carefully pinch the edges of the dough together to seal the red bean paste inside.
• Gently shape the filled mochi into a smooth, round ball.
6. Final Touches:
• Lightly dust each daifuku with more potato starch or cornstarch to prevent sticking.
• Let the daifuku cool completely before serving.
