How to make Egg Foo Young?

Ingredients:

• 6 large eggs

• 1 cup bean sprouts

• 1/2 cup thinly sliced carrots

• 1/2 cup peas

• 1/2 cup cooked shrimp or diced chicken (optional)

• 2 green onions, thinly sliced

• 2 cloves garlic, minced

• 1/4 cup soy sauce

• 1 tablespoon oyster sauce

• 1 teaspoon sesame oil

• 1/2 teaspoon white pepper

• 2 tablespoons vegetable oil (for frying)

For the gravy:

• 1 cup chicken broth

• 2 tablespoons soy sauce

• 1 tablespoon oyster sauce

• 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions:

1. Prepare the Omelette Batter:

1. In a large bowl, beat the eggs until smooth.

2. Add the bean sprouts, carrots, peas, cooked shrimp or chicken, green onions, garlic, soy sauce, oyster sauce, sesame oil, and white pepper to the beaten eggs. Mix well.

2. Cook the Omelettes:

1. Heat 1 tablespoon of vegetable oil in a non-stick skillet or wok over medium-high heat.

2. Pour about 1/2 cup of the egg mixture into the skillet, spreading it out to form a thick omelette.

3. Cook until the edges start to set and the bottom is golden brown, about 2-3 minutes.

4. Flip the omelette and cook for another 2-3 minutes until fully cooked.

5. Remove the omelette from the skillet and place it on a plate. Repeat with the remaining egg mixture, adding more oil as needed.

3. Prepare the Gravy:

1. In a small saucepan, bring the chicken broth, soy sauce, and oyster sauce to a boil.

2. Add the cornstarch mixture and stir until the gravy thickens, about 1-2 minutes.

3. Remove from heat.

4. Serve:

1. Pour the gravy over the cooked omelettes.

2. Garnish with additional sliced green onions if desired.

3. Serve hot with steamed rice.
