How to make Mocha Cake?

Ingredients:

For the Cake:

• 1 ¾ cups all-purpose flour

• 2 cups granulated sugar

• ¾ cup unsweetened cocoa powder

• 2 teaspoons baking soda

• 1 teaspoon baking powder

• 1 teaspoon salt

• 1 cup buttermilk

• ½ cup vegetable oil

• 2 large eggs, at room temperature

• 2 teaspoons vanilla extract

• 1 cup freshly brewed strong hot coffee

For the Mocha Frosting:

• 1 cup unsalted butter, softened

• 3 ½ cups powdered sugar, sifted

• ½ cup unsweetened cocoa powder, sifted

• ½ teaspoon salt

• 2 teaspoons vanilla extract

• 1 teaspoon espresso powder dissolved in 2 tablespoons of warm water

• 3-4 tablespoons heavy cream (or as needed to reach desired consistency)

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Combine the dry ingredients: In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.

3. Mix the wet ingredients: In another bowl, whisk together the buttermilk, oil, eggs, and vanilla until well combined.

4. Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Then, stir in the hot coffee until the batter is smooth.

5. Bake the cake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.

6. Make the mocha frosting: Beat the softened butter on medium speed until creamy. Gradually add the powdered sugar and cocoa powder, beating until smooth. Add the salt, vanilla, dissolved espresso powder, and heavy cream. Beat on high until the frosting is light and fluffy, adjusting the consistency with more cream if needed.

7. Assemble the cake: Once the cakes are completely cooled, place one cake layer on your serving plate. Spread a generous amount of frosting over the top. Add the second cake layer and cover the entire cake with the remaining frosting. Use a spatula to create swirls and peaks.

8. Decorate: For an elegant finish, sprinkle the top with cocoa powder and add chocolate curls or shavings.
