How to make Mango Mousse Cake?
Ingredients
For the Crust:
• 1 ½ cups graham cracker crumbs
• ⅓ cup sugar
• ½ cup unsalted butter, melted
For the Mango Mousse:
• 2 cups mango puree (from about 2-3 ripe mangoes)
• ½ cup sugar (adjust based on the sweetness of the mangoes)
• 1 tablespoon lemon juice
• 1 ½ teaspoons gelatin powder
• ¼ cup water
• 1 cup heavy whipping cream
For the Mango Gelée:
• ½ cup mango puree
• 2 tablespoons sugar (optional, adjust based on sweetness of the mango puree)
• 1 teaspoon gelatin powder
• 2 tablespoons water
Garnish:
• Fresh mango slices
• Mint leaves
Instructions
1. Prepare the Crust:
• Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix well.
• Press the mixture into the bottom of a springform pan, forming a compact, even layer. Chill in the refrigerator for about 30 minutes to set.
2. Make the Mango Mousse:
• Sprinkle gelatin over water in a small bowl; let it bloom for about 5-10 minutes.
• Heat the mango puree, sugar, and lemon juice in a saucepan over medium heat until sugar dissolves. Do not boil.
• Add the bloomed gelatin to the mango mixture and stir until the gelatin is fully dissolved. Remove from heat and let it cool to room temperature.
• Whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cooled mango mixture.
• Pour the mousse over the prepared crust in the springform pan. Smooth the top with a spatula. Refrigerate for at least 4 hours, or until set.
3. Prepare the Mango Gelée:
• Sprinkle gelatin over water in a small bowl; let it bloom for about 5-10 minutes.
• Heat the mango puree and sugar in a saucepan over medium heat until sugar dissolves. Add the bloomed gelatin and stir until fully dissolved.
• Let the gelée mixture cool slightly, then pour it over the set mousse layer. Refrigerate the cake until the gelée layer is set, about 2 hours.
4. Garnish and Serve:
• Before serving, arrange fresh mango slices and mint leaves on top of the cake for garnish.
• Carefully release the cake from the springform pan and serve chilled.
