If you live in Austin then you know Swedish Hill and hopefully you know the Clarksville crunch salad - I finally made it at home and it’s the perfect healthy weekday lunch!
Ingredients:
-1 large head or bag of green kale
-1 rotisserie chicken (or protein of choice)
-1 head cauliflower
-1 can great northern beans (any white bean or chickpea works here)
-1/4 cup sliced almonds
-1/4 cup pumpkin seeds
-1 tbsp sesame seeds
-1 tbsp black sesame seeds
-garlic powder, onion powder, salt & pepper for seasoning
Tahini Dressing:
-1/2 cup extra virgin olive oil
-1/3 cup tahini
-juice of 1 lemon
-1 tbsp maple syrup (or honey)
-1 clove garlic minced
-salt & pepper
-water to thin if needed
Directions:
1. Preheat oven to 425 degrees.
2. Cut cauliflower head into small pieces and then add to a large baking sheet. Spray the cauliflower with a little olive oil or avocado oil spray and then add salt, pepper, garlic + onion powder. Add to the oven to roast for about 25 minutes while you prep the rest of your ingredients.
3. For the rest of the salad - wash and cut your kale into small pieces, drain and rinse beans, and shred your rotisserie chicken. Add all of the dressing ingredients to a bowl and whisk together until smooth - add more salt & pepper to taste and a little water to thin if needed.
4. Once cauliflower has been cooking for about 25 minutes - add your sliced almonds, pumpkin seeds, and sesame seeds to a small baking sheet. Spray with a little olive oil or avocado oil spray and then add a little salt, garlic + onion powder. Add to the oven to cook for about 5 minutes while the cauliflower finishes.
5. Assemble salad with kale, roasted cauliflower, chicken, white beans, toasted seed mixture, and all the creamy dressing. ENJOYYY!!!
