I have a major sweet tooth and always love something sweet after dinner but I need it to be super quick and also still relatively healthy! These are some of my favorite combinations to have in the fridge during a crazy week!

1. Dark Chocolate Figs - Slice fresh figs in half. Microwave 1/4 cup dark chocolate chips with 1 tbsp of coconut oil and mix until melted together. Dip figs in chocolate and then add flakey sea salt. Put in the fridge until chocolate is cooled and enjoy!!!!

2. Dark Chocolate Sumo Oranges - Peel a sumo orange and microwave 1/4 cup dark chocolate chips with 1 tbsp of coconut oil and mix until melted together. Dip each sumo slice into the chocolate and then add flakey sea salt. Put in the fridge until chocolate is cooled and enjoy all week!

3. Apples with homemade date caramel + toppings - First make your homemade date caramel (directions below.) Then slice apples and dip into the date caramel. Top with toppings of choice.- my favorite are crushed roasted peanuts or a drizzle of melted dark chocolate :)

Date Caramel Ingredients:

-15 pitted dates

-1/2 cup full-fat coconut milk (use mostly the solid part on top)

-2 tsp vanilla bean paste or vanilla extract

-1/2 tsp cinnamon

-1/2 tsp salt

Directions:

1. Add the dates to a bowl and cover with boiling water for 15 minutes to soften.

2. Transfer the soaked dates to a blender or food processor with the coconut milk. Blend until smooth - if it’s still too thick you can add additional coconut milk. Remove from blender and into a storage container or serving dish.

3. Stir in the vanilla, salt, and cinnamon and enjoy!!!!

4. Let mixture cool completely before refrigerating.
