One pan asian chicken lettuce wraps - an all time favorite weeknight recipe !! these are so easy and fresh and you can use whatever combo of veggies you have in the fridge!

Ingredients:

-butter lettuce or lettuce of choice

-1 lb ground chicken (can also do ground turkey, beef, or tofu - anything works here!)

-1 red bell pepper

-1 orange bell pepper

-1 small white onion chopped

-1 cup bean sprouts

-2-3 loose carrots

-3 green onions

-1/2 cup chopped cilantro

-3 cloves garlic minced

-1 inch fresh ginger grated

-1/2 cup soy sauce or coconut aminos

-1/3 cup creamy peanut butter

-1 tbsp pure maple syrup or honey

-siracha to taste

-crushed peanuts + limes + chili onion crunch for optional toppings!

Directions:

1. Heat a pan over medium high heat and then add a little olive oil or sesame oil. Once oil is heated, add in chopped onion and cook until translucent. Then add in garlic and ginger and cook for a few minutes, careful not to burn the garlic.

2. After garlic and ginger have cooked for a few minutes, add in ground chicken (or protein of choice) and cook until browned/pretty much cooked through.

3. While chicken is cooking, chop the rest of your veggies pretty small (peppers, carrots, bean sprouts, green onions) so they cook quick and whisk together the soy sauce, peanut butter, siracha, and maple syrup. Once chicken is almost done, add the veggies and sauce mixture and mix around. Cover and let cook for about 10 minutes or until veggies are soft and sauce is slightly thickened.

4. Once veggies are soft, assemble lettuce cups with your lettuce, chicken/veggie mixture, and toppings of choice! Enjoyyyyyyy your meal and one pan clean up!!
