I made this cake for my sister’s graduation party and y’all. I’m over the moon.😋 This is definitely giving alllll the summer vibes and I’m here for it!😍

🍋LEMON CAKE:

2 c sugar

1 Tbsp fresh lemon zest

2 cups + 2 Tbsp AP flour

2 tsp baking powder

1/2 tsp salt

2/3 cup butter, room temp

5 egg whites

3/4 c sour cream, room temp

1/4 c lemon juice, freshly squeezed

1 Tbsp vegetable oil

1 tsp vanilla extract

RECIPE: Preheat oven to 350

1. Grease 3 6” cake pans.

2. Add 2 c sugar and 1 Tbsp zest into a large bowl. Massage the sugar and zest together to release the oil in the zest.

3. Add 2 cups and 2 Tbsp flour, 2 tsp baking powder, and 1/2 tsp salt into the lemon sugar. Mix on a low speed until combined.

4. Mix in 2/3 c butter on low speed. Continue to mix until the mixture becomes a crumble.

5. Mix in 3/4 c sour cream, 1/4 c lemon juice, 1 Tbsp vegetable oil, and 1 tsp vanilla extract.

6. Pour batter into your prepared cake pans and bake for 30 minutes or until toothpick comes out clean.

🍋LEMON BUTTERCREAM FROSTING:

1 c butter, room temp

4-5 c powdered sugar, depending on consistency you’d like.

2 tsp lemon zest

1/4 tsp salt

3-4 Tbs fresh lemon juice

RECIPE: Mix in a large bowl until combined.

⭐️ASSEMBLY:

YOU NEED:

Lemon cake

Raspberry preserves

Lemon buttercream frosting

1. Start with fully cooled lemon cake- I like to freeze mine- and level your tops out to make a flat surface.

2. Using your lemon buttercream, outline the top with a circle in order to hold your preserves in. Photo to reference in comments!

3. Add preserves, then top with second layer of cake.

4. Repeat steps 2 and 3, then frost entire cake.

Enjoy right away or store in the fridge for up to a week!💞
